Tuesday Night is the highlight of my week. It goes something like this: 20 people pile into our house. We eat a yummy meal together. We talk about life, God and share what’s going on in our hectic lives. Not a week goes by that we don’t shed a few tears and as we grow together, our fits of laughter become more and more frequent. I love cooking for this group and hearing the conversations and connections that are made over a delish plate of food.

This is one of the group’s favorite meals and one of mine too because it is so easy to make! It’s perfect for a group or for a mid-week comfort-food fix!

Kate’s Chicken Delight – AKA Cheesy Crescent Chicken
2 cups cubed chicken
1 cup shredded cheddar cheese
1 tube of refrigerated crescent rolls
1/2 can cream of chicken soup
1/2 can cream of mushroom soup
1/2 cup milk

-Preheat your oven to 375 and grease a baking dish. I usually use a 9×13
-Mix together the chicken and 1/2 of the cheddar cheese.
-Spoon a big spoonful of the chicken mixture on each triangle (crescent roll) and roll to opposite point.
-In a saucepan, combine the milk, coups and about 1/4 of the cheese until it is melted.
-Pour half of the soup mixture into the greased baking dish.

-Arrange the crescent rolls over the mixture
-Pour remaining mixture on top and top with remaining cheese.
-Bake for around 20-25 minutes or until the tops of the yummy crescents are slightly brown.

This recipe feeds about 4. For groups of 15-20 I quadruple it.

I am not a huge fan of meatloaf. I used to make it all of the time when Chad and I were first married because it was one of the only things I could make and not burn. But as my (ahem) culinary skills evolved, the trusty meatloaf took a back seat. But … a few months ago I came across this recipe from one of my favorite crock-pot sites and we loved it! The Lipton soup made it super flavorful and doing it in the crockpot made it really “loafy.” Is that a word? I’m not saying it’s a healthy option, but it was delish and great for busy moms. Know any?

1 Lg. Onion chopped

1 Lg. Bell Pepper Chopped

2 eggs, beaten

3/4 Cup of Milk

3/4 Cup dry bread crumbs or cracker crumbs (I used Nabisco crackers)

1 Envelope Lipton Onion Soup Mix

2-3 lbs ground beef

Line Crock Pot with foil (easy cleanup!)

Mix together the Eggs, Milk, Cracker Crumbs, & Onion Soup Mix. Then add meat and Onions and Peppers. Mix all thoroughly and shape into loaf. Stick it in the crock pot and cook on low for 6-8hrs.

It was looking a little bland about an hour before I served it, so I put a little brown sugar glaze on it and let it cook for another hour and a half. Just do it to taste, but the one I use goes something like this:

1 Cup Ketchup

4 tablespoons Brown Sugar

4 tsp. Cider Vinegar
